The classic cookbook

If you can find The classic cook book by Chistopher Kimball, Buy it! Tho one that has The Cooks Bible & The Dessert Bible. Excellent teaching book.

Back to the book. This isn't just a collection of recipes. This is a how to. He gives instructions on how to put it together as well as what works, what doesn't work & why it doesn't work.

If you saw the movie Julie and Juliette, you know there is a part where the author of The Joy of Cooking admitted that she didn't test her recipes. I might as well throw that book away since I don't trust it anymore. Not that I need to ever skin a rabbit anyway.
Christopher, on the other hand, shares his test results. For example under asparagus, he tested five methods of preparation: steaming, braising, grilling, and stir-frying.

I just love this book. I do wish it was available on the Kindle because it is a huge book. Almost 800 pages. I just can't believe it is out of print. I've never seen a better teaching reference book.
