Apparently the Stewart family has a warped sense of humor. We realize that the size alone of a hybird wolf isn't enough to intimidate someone. If only pitbulls could pull off this look.

Forgiving Dr. Mengele

I just finished watching "Forgiving Dr. Mengele" on Netflix instant watch. It is a documentary about Eva Mozes Kor who with her twin sister was taken to Auschwitz where Dr. Mengele performed his experiments.

It was enlightening. I find it amazing what this woman has accomplished. I did not expect to see Eva Mozes Kor visit with six Palestinians. I can't believe she rolled her eyes at them. She can forgive the Nazi's for the experiments they did on her and her twin sister, but she can't forgive the Palestinians? I'm not saying that Israel would go as far as the concentration camps, but how could she not see that these people experienced the same thing that the Jews did in the beginning of the Holocaust? She didn't want to hear their stories. I don't know what she expected but to be truthful, I think she was so afraid that her mind just shut down. She couldn't handle their stories. Was it because they became human?

I appreciated the documentary. It was heart wrenching at times. It is horrible that genocide continues to this very day. I just don't get it.

Dr. Laura is my walking buddy

You read that right. Dr. Laura and I have been hitting the streets 2 or 3 times a week. I'll tell you that woman can make me scream at the callers she gets. On occasion she has made me cry. There have even been times when I have had to reprimand her for not listening. Dr. Laura doesn't mind. The neighbors probably think I am crazy for talking to her.

That's because Dr. Laura is not with me physically. I am listening to her podcast that I subscribed to. I've been listening to her show since she got the lunch hour spot on KFI640 many many years ago. If you do a google search on Dr. Laura, you'll find a lot of hate sites. I think some of those sites come from the crowd that believe in free speech as long as you agree with them. Heaven have mercy on your soul if you disagree with them.

What these people fail to see is that Dr. Laura is human and like all of us learns and grows as a person as she gets older. She educates her self on topics. I remember screaming at her years ago when her comments on homeschooling were clearly uninformed. Guess what? She got informed. She now supports the choice to home school and even recommends it.

I really don't know how she can do three hours every weekday. I know there are times she has to scream when she gets off the air. I also don't understand how people can say they have listened to her for years and ask the questions they do. If you listen to her, how can you not know what she will say? It isn't rocket science.

Her message is simple. Be there for your kids. Go and do the right thing. Don't stay silent to evil. Don't be a wet noodle. Love your kids. Love your spouse.

I believe she does a lot more good than not. I think this post ended up being a different perspective of Dr. Laura than that of the hate sites.

I really wanted to endorse the three hour podcast. No commercials. Listen anytime you want. I'm not just walking when I listen to her. My arms are being thrown up in the air, my pace quickens, my adrenaline gets additional shots and I laugh. All bonus exertion to add to the walk. I think Dr. Laura makes a great walking buddy.

Chicken Parmesan

One of my husband's favorite meals when we dine out is Chicken Parmesan and spaghetti. After reading "Cook this, Not that" and seeing that Romano's Macaroni Grill Chicken Parmigiana is 850 calories and that I can cook it my self with only 340 calories, I just had to try it.
It was surprisingly simple. The best compliment was that hubby said it was better than our local diners that we frequent. Yay. Thank you hubby.

Recipe calls for:
4 boneless chicken breasts
1/2 tsp salt
1/2 tsp pepper
2 egg whites lightly beaten
1 cup bread crumbs ( I used Panko with jalapeno)
2 tbs grated Parmesan
1/2 Tbs dried Italian seasoning
1 TBS olive oil
1 cup tomato sauce
4 oz shredded part skim mozzarella
fresh basil leaves

Preheat broiler. Cover chicken with plastic wrap or parchment Paper (paper much easier) and pound the chicken until it is uniformly 1/4" thick. Season with salt and pepper. (I mixed the pepper and salt. I thought it was way to much pepper and I had some left over.)

Place the egg whites in a shallow bowl. (I used a pie pan)
Mix the bread crumbs, Parmesan, and Italian seasoning on a large plate (Again, I used another pie plate)

Dip each breast into the egg white to coat both sides and then into the crumb mixture patting the crumbs so they fully cover the chicken

Heat the oil in a large skillet or saute pan over medium heat.
Oops. Totally missed that part. I put in regular cooking oil and put in enough to reach the chicken thickness 1/2 way.

Cook for two to three minutes before turning. Crust should be deep brown and crunchy.
Cook another 2 - 3 minutes.
Transfer chicken to a baking sheet. (I covered the cooking sheet with tinfoil and sprayed it with Pam) Spoon tomato sauce over the chicken pieces. Top with mozzarella cheese. (It was not have enough cheese. I only covered three pieces) Place the tray under the broiler for 2 to 3 minutes until cheese is fully melted and bubbly. Serve garnished with basil. (I didn't do that)

I'm sure the total calories the way I cooked it was a bit higher since I didn't use the olive oil. Plus I served it with spaghetti. The book "Cook this Not that" has a section about pasta that I need to read closer (translated actually pay attention and read).

All in all, the Chicken Parmesan was a hit and I give it three thumbs up.

On a side note, I used a hand shredder from Pampered Chef that I also recommend. You can get the little measuring cup (sold separately) It is perfect when you only need a specific amount of cheese shredded. I was able to pull the mozzarella right out of the fridge to shred with no need to worry about it jamming the machine or breaking apart.

I have more fabric arriving Wednesday that Iwill use to make skirts and blouses from. To bad the dress code at work requires sleeves.

Eating out = HUGE CALORIES INTAKE

Men's health ran an article giving 15 recipies for weight loss. Now this isn't about diet food. Far from it in my opinion. These are delicious meals compared with what you would order if you were eating out. The difference is in the calories if you cook it your self or if you eat out.

One example is Olive Garden Fettuccine Alfredo. Calorie intake 1,220, 75 g of fat and a whopping 1,350 mg of sodium. Cook it your self and you have a mere 540 calories, 14 g of fat and only 520 mg of sodium.

I can easily say that I will prepare 14 of the 15 recipes given. I even ordered the book "Cook this, Not that" they were advertising. Of course I went to Amazon to order the book. I'm sure Men's Health is charging you $30 for a $10 book. Granted I don't know what they are charging as I wasn't going to fill in all the information they wanted to order it BEFORE giving a price. (no props for that)

I think I'll make the chicken parmesan this weekend. I'll let you know how it turns out.

E-Mealz.com

I have to say that I do enjoy e-mealz.com. No more sitting at the table and coming up with a week's worth of meals to serve for dinner. E-mealz provides 5 meals a week that includes ingredients and instructions on how to prepare the meal. This is all on a single page. The second page is a grocery shop with all the ingredients needed. Each grocery item has the # of the meal it goes with. Whoo Hoo! What a great time saver. This is a subscription service, but its well worth the money.
